Strawberry shortbread

Woke up to the news of a Manchester pop concert being bombed this morning. I can’t quite get my head around it. It seems so much more real when it’s close by, a city we know and love where friends and family still live. Adam still works there – he’s gone in today – and it’s where we lived for 13 years. Both kids were born there. On the radio just now a poor mother was in tears as her daughter hasn’t been located yet. There are no words…

I texted Adam (he leaves the house before I get up) and asked if he should be going in. He said of course he should, just got to get on as normal. He’s right. We must. It’s not just all we can do – it what we MUST do. It’s the only way to fight it. Come out in defiance and live how we want to, on our terms, not theirs. But today maybe we should all live MORE. Love a bit harder, forgive people more easily, enjoy the little things a bit more.

Because nothing really matters does it? Those silly worries we all have. As long as our family and friends are safe and well. It’s important to just enjoy your life and appreciate the everyday moments that make it beautiful.

This easy and simple dessert is loved by kids and adults – it’s so simple and tastes of an English summer. If you can’t be bothered to make the shortbread (it’s amazing though so I do urge you to try it) then use shop bought, good quality shortbread. Equally, if you don’t want to whip cream, use thick Jersey cream, as I have here.

Makes: 10 biscuits

Takes: 20 minutes


  • 100g butter
  • 50g caster sugar
  • 160g plain flour
  • Thick Jersey cream (or whip double cream)
  • Sliced strawberries


  1. Preheat oven to 190C. Grease a baking tray.
  2. Cream butter and sugar together.
  3. Mix the flour in and make a dough.
  4. Roll out gently and cut out little rounds.
  5. Bake for 10-12 minutes.
  6. Let cool and then sandwich cream and sliced strawberries.
