Courgette and sweetcorn pancakes


So as I have told you previously, we have started getting an organic fruit and veg box from Riverford. It’s great. Love it. It means you have to work to get through your veg, as you know a box is coming. I actually think a large box, which is what we have, is perhaps too big. But once you nail the right size, it’s great to have seasonal, local vegetables delivered to you. For me, I like the surprise of seeing what’s in the box – and planning my meal plan around it. OK, so I don’t always stick to it… like the hungover Chinese takeaway that replaced the pork we were supposed to be having on Saturday. But, hey, that’s life sometimes…

So… when you have a veg box coming you need to eat your way through a fridge load of green stuff. Either that or you’ll have to throw it out, which I really hate doing and almost never have to. One way to get veg into kids is fritters – or pancakes as I have started calling them, as they are more pancake like than fritter like. Arthur – my little fussy man – LOVES these courgette ones. Not kidding. He demolishes them. And this is the kid that has to be blackmailed to eat a piece of broccoli.

I knock them up quite a bit. I used to put feta in them – but, guess what, he hates cheese (apart from Parmesan – so middle class), so now I make them fairly plain. This time I added sweetcorn as I had a can open, but only to half of them as my husband loathes tinned sweetcorn. The ingredients are not precise, I tend to just wang them together and they always work. Saying that, my husband tried that once and they were more like scrambled pancakes!

So here’s the proportions I used when I made these for lunch on Saturday. I hope your little veg haters like them as much as mine!

Makes: 8-10 dependent on size

Takes: 15 minutes

5 small courgettes (or 3 large ones), grated

3 eggs

4 heaped tablespoons of plain flour

1 small tin of sweetcorn, drained

Salt and pepper

2 tablespoons of vegetable oil


  1. Grate your courgettes. Then take a handful of it and squeeze over the sink. Do this a few times, it gets rid of excess water. You could use a clean kitchen towel but this way there is less washing.
  2. Add flour, eggs, and seasoning then mix.
  3. Heat oil in a large frying pan. Wait till it’s hot, then add batter. Wait a few minutes, then flip. Keep turning them over and even press down on them with your fish slice, this ensures they are cooked through. Do this for about 10 minutes, until they are nice and brown.
  4. Serve as is – or with veggie crudites to get even more goodness into the swines!!
