Foolproof apple and sponge pudding

In fairness this is a cocked up Eve’s pudding! If you don’t know (as I didn’t until 2 days ago), Eve’s pudding is an old fashioned pudding of stewed apples with a sponge topping. I went to lunch at my Nana’s the other day, and she made an Eve’s pudding, the recipe was taken from the Bero book. It was soooo good. Just really simple, tasty, warming. Like a crumble in its ease but better I think. Tart, soft apples smothered in a moist, crusty sponge. I vowed to try making it when I got home, which I did, but I used plan flour instead of self-raising by mistake. Do you know what, I think it’s better not having risen that much! This is my new go-to pudding for Sunday lunches. The whole family loved it, which is actually quite rare as Artie and Adam don’t go for sweet things that much, unless it’s chocolate of course in Artie’s case. I urge you to try this, especially if you are of the unconfident variety. You can’t go wrong. I even melted the butter meaning to soften it, and it was still fine. Slice up some Bramleys, whisk up a simple sponge batter and away you go, 40 minutes later you have yourself a divine homemade pudding the whole family will love you even more for. Thanks Nana!
Serves: 8 adults
Prep time: 15 minutes
Cook time: 40 minutes
Total time: 55 minutes

100g plain flour (or self-raising if you want to to make an authentic, more risen Eve’s pudding)
100g butter, softened
100g unrefined caster sugar 
2 eggs, beaten 
2 Bramley apples, peeled and thickly sliced
Tablespoon of caster sugar to sprinkle on apples 
Squeeze of lemon (optional)
Pinch of cinnamon (optional)
  1. Preheat your oven to 180C. 
  2. Slice your apples directly into a medium sized baking dish. Mine was 23cm in diameter 
  3. Squeeze a little lemon and sprinkle sugar and cinnamon over, then mix. 
  4. To make your sponge, whisk sugar and butter together for a couple of minutes. Then add an egg at a time and whisk, each with a little flour. Finally incorporate all the flour in using the whisk. Pour over the apples and spread with a palette knife or similar to smooth the top. There will be apples peeking out, but that’s nice I think. 
  5. Bake for 40 minutes. Eat warm with cream or ice cream. Or cold is good too. I bet this doesn’t last a full day in your house, it didn’t in mine.

    I made the eves pudding with winter fruits and it was delicious. I haven't baked for year but used to make this most weekends when I got married in 1969. The sponge mix was so light. Thank you x

    Lovely, the Grandsons loved it too. Great recipe and stayed very moist. Lovely with cream, ice cream or custard. We had custard

    My mother used to make this when we were wee however she enhanced it even more by adding a meringue topping. Totally scrumptious especially when you had the top of the milk or loads of cream. Looking forward to trying this myself tonight.
