Easy mini muffin pizzas

This is the type of thing my pre-kids, snooty, foodie self may have sneered at. Muffins as a pizza base? Tomato puree as a pizza sauce? Nooooooo. But, as quick teas go, this was pretty awesome. It was another emergency express dinner, as I had been at my neighbour’s house drinking wine. May as well be honest, eh?! It got to the time when they really did need to be fed, so we sped home across the road and I chucked these together. The kids absolutely loved them, and we sat dreaming up other topping ideas. Next time, when I’m not in such a rush, I will get them involved as it is all so simple.

These would be lovely for a party, and are perfect packed up cold for a lunch box or a picnic the next day. We had sweetcorn cobs, but sweet potato wedges would be good too.

Makes: 8 (enough for 4 people with a side)

Takes: 10 minutes

Ingredients:

  • Muffins, split in half
  • Mozzarella (1 or 2 mini pearls per pizza, torn into bits)
  • Salami (1 piece per pizza, cut into strips)
  • Tomatoes, halved
  • Tomato puree (I used a scant teaspoon on each one)
  • Olive oil, a drizzle
  • Dried oregano, a pinch

Instructions:

  1. Heat your grill.
  2. Spilt the muffins and toast on the underside.
  3. Turn over and top with tomato puree, torn mozzarella, snipped up salami, tomatoes, then sprinkle oregano and drizzle with extra virgin olive oil, then pop back under grill until brown and bubbling.
  4. Serve with sweetcorn or wedges.
