Christmas spiced pancakes with cranberry compote

What will you have for Christmas breakfast? We often choose something light and fairly plain, like boiled eggs and soldiers. But what if you wanted something a bit more festive? Maybe not on Christmas Day itself, but perhaps for the first day of the holidays, or Christmas Eve? These pancakes are just the thing. They are easy and quick, especially if you make the batter the night before, and they have a light spice flavour. I used up some cranberries that I had left over from my cranberry sauce making (I do everything in advance) so I made a super quick compote which would be lovely over vanilla ice cream.

Makes: About 12 pancakes

Takes: 10 minutes plus frying time

Ingredients:

  • 125g plain flour
  • 30g sugar
  • Pinch salt
  • 250g yoghurt
  • approx 50ml milk (more if needed)
  • 2 tablespoons butter, melted
  • 3 eggs
  • 1 teaspoon mixed spice
  • 1 teaspoon vanilla extract

Cranberry compote:

  • About 200g cranberries
  • Splash of orange juice (about 75ml)
  • 4 tablespoons sugar

To serve:

  • Butter
  • Maple syrup

Instructions:

  1. Simply whisk everything together. Don’t worry if there are a few lumps, it’s fine.
  2. Heat butter in a frying pan and fry in batches, keeping them warm in a low oven when they are done.
  3. For the compote, mix cranberries, juice and sugar. Boil then simmer for 10 minutes, squashing the berries with a fork. Set aside.
  4. Serve in a stack, with a knob of butter between each pancakes and then top with some compote and maple syrup.
