Kale, mackerel, beetroot and avocado salad

If I gave this to my children they would be lost for words. They’d look at me, lip-curlingly aghast that I had basically served them 4 things (oh actually, 3 things) that they don’t like. So, just to be clear, this is for MUMMIES. A quick, throw together lunch for busy parents who want to be healthy and enjoy the odd meal where they don’t have to think about what their delightful offspring don’t like about that they have made.

Without being a smug person about it, this is the type of thing I like to eat for lunch, particularly in the summer months. Not necessarily all the time, but if I eat stuff like this most of the time, then it doesn’t matter when I eat this or that for dinner. It’s called balance, I think. But I genuinely do love food like this, so even though I have stopped using the #eatclean label on my Instagram because I don’t agree with it, I do tend to like the food that the so called #eatclean people bang on about!

I don’t normally, ever, post these quick little healthy lunches that I make for myself, but they always go down well on Instagram, so I thought maybe I should… you know, for the mums who work from home – but this would be great to pop into a tupperware box and take in to eat at your desk too.

Kale, eaten raw like this with olive oil and lemon, salt and pepper rubbed into it (I can’t bring myself to say massaged) is actually really nice. As a base for a salad – with tahini or falafel, or feta, or a million other healthy things popped on top, it just works. And you feel very pleased with yourself afterwards too. At least I do…

Would your kids eat this? Am I being unfair to the nation’s little people. I just know that mine wouldn’t… Well, they’d pick out the mackerel if they were really hungry.

Serves: 2 people
Prep time: 3 minutes
Cook time: NA
Total time: 3 minutes

Big handful of kale
2 tablespoons of extra virgin olive oil
1 lemon, juice of
2 ready cooked beets, sliced
1 avocado, sliced
Packet of smoked mackerel fillets, torn into pieces, at least 1 per person
Salt and pepper

Instructions: 

  1. Rub oil and lemon, plus salt and pepper into the kale.
  2. Slice up avocado and beetroot.
  3. Tear up mackerel, removing skin also.
  4. Mix well and eat!
