So I haven’t mentioned it before on here, not sure why (think I wanted to just get going with it a bit first), but I have become a vlogger! What is a vlogger? Well, it just means I have taken the next step in my blogging (ahem) career (!) and started making recipe videos and publishing them on YouTube.
It’s all thanks to the wonderful and marvellous Channel Mum. Channel Mum are a brand new business, set up by Siobhan who started netmums, that is all about finding the best content for mums on YouTube and bringing it to the fore. I don’t know about you but it really puts me off using YouTube as I find it really hard to find the type of videos I want. Well, Channel Mum are going to sort this out for us! They ran a ‘New Talent’ sponsorship programme. I applied for it and got a place (still can’t believe it). Therefore I have spent the last few months making videos and feeling like a total novice once more! Just when I got all comfortable in my blogging slippers… still, it’s good to challenge yourself they say.
I will be publishing all my video content on Channel Mum’s own quite fabulous channel. I’ll be posting recipes, obviously, but I also make non-recipe videos, mainly about food but also about other mum stuff. Purleeeeaase do come on over to Channel Mum and say hi!
This little muffin recipe is so easy and simple… and quite healthy too. I have omitted refined sugar and used manuka honey instead. I also used half buckwheat flour and half plain flour (some people find the taste of buckwheat too ‘healthy’ so this is a good compromise!) They make a great after school snack (I warmed them in a microwave and served with butter) or breakfast on the go.
Makes: 24 little muffins
Prep time: 10 minutes
Cook time: 12 minutes
Total time: 22 minutes
Ingredients:
280g flour (any – I used a mixture of plain white and buckwheat)
60g porridge oats
1 tsp baking powder
1 tsp bicarbonate of soda
Pinch of salt
225g natural or Greek yoghurt
120g butter, melted
2 eggs125g honey or maple syrup
100g blueberries
2 apples, grated

Instructions:
- Preheat oven to 180C. Grease a 12 hole muffin tin – or grease 2 if you have 2, I just used mine twice! Do line with paper cases if you want to, I didn’t.
- Simply mix the dry ingredients and then the wet. Fold the fruit in and plop about a tablespoon in each hole.
- Bake for 12 – 15 minutes.
Hi! Very nice recipe, I'd love to make these but you didn't list the eggs! 🙂 In the video you say: "some eggs", but I'm unsure how many you mean.
