My go to ‘dessert’ for the kids (which, since they were tiny babies I give them after pretty much every meal) is always based around yoghurt. Greek, preferably. Full fat, always. Ideally I will also have a little fruit in there too, probably banana or berries. There’s always a dribble of a natural syrup (currently swooning over Crazy Jack’s Date Syrup) or simply honey on top. And if they’re very lucky, something to give a crunch, like granola. At its best, this dessert is almost like a sundae, a healthy one – Artie loves it this way. At its most simple, it’s just a bowl of plain yoghurt; it’s all down to what I have in the cupboards. Funnily enough, Bea always prefers it when it’s nice and simple.
The sundae idea is what I have used here to showcase Eat Natural‘s toasted muesli, which is basically like a lovely crunchy granola type affair – toasted buckwheat, crisped rice, seeds, dried fruit, coconut and cinnamon – only less sweet, and even more crunchy. The variety I am using here is buckwheat, which happily means it’s gluten free too. I am very proud to be working with Eat Natural. I have genuinely been a fan of their work for years – don’t laugh! I used to travel a lot on trains to work meetings (pre kids) and always chose their bars from the refreshments trolley to have with a cup of tea to celebrate the journey home. I even started a blog about them once. Really! Now you really do think I’m a bit strange…
Like I say, I’m working with them at the moment to see what recipes I can come up with using their range. So, watch out for upcoming concoctions using their bars and cereals… I will tag them all so they can be easily accessed via the Eat Natural logo on the side bar.
This sundae is great for breakfast, dessert – or, as I normally eat this type of thing – curled up on the sofa watching mindless drivel on the tellybox. Serve in a pretty jam jar to enable the eater to see what’s inside. Why not make ahead, put the lid on the jar and store in the fridge overnight -only if using berries (bananas would go brown) – and you’ve got yourself a cute takeaway breakfast in the morning!

4 tablespoons of Greek yoghurt (Total is the best one, the full fat variety!)
4 tablespoons of Eat Natural toasted muesli, buckwheat (or use a good brand / homemade granola)
2 tablespoons Date Syrup (I used Crazy Jack’s, but honey or maple syrup would be great)
Half a banana, sliced
- You’re going to do two layers. Using a clear glass to serve it in, start by sprinkling in a layer of crunchy muesli / granola, followed by Greek yoghurt, then the bananas, and finally the syrup.
- Repeat: crunch, yoghurt, bananas, but then add more crunch so it’s visible, and finally the syrup. Ta da!
